Unicorn Cookies – Recipe
♥ 1,5 cups flour ♥ 0,5 cup almond flour
♥ 0,75 cup sugar ♥ 3 tsp vanilla sugar ♥ 1 stick butter (115 g)
♥ 1 egg (size L/XL alternatively two small ones)
♥ 1 tsp baking powder
Royal Icing Ingredients:
♥ 1,5 cups icing sugar
♥ 1 tsp lemon juice

Firstly, I mixed all the dry ingredients together. Melting the butter, mixing it together with the egg(s) and adding the liquid into the bowl (which contains the mixture of the dry ingredients) is the second step we need to follow. Next, knead the substance to a smooth dough and wrap it in foil. Put the dough in a cool place for about 30 minutes.
Unwrap it, lightly spread flour onto the surfuce so that it doesn’t stick and roll it out. The thinner the dough is, the crispier the cookies are going to be. While cutting out the cookies, heat your oven up to 350 degrees (approx. 180° celcius) and finally, put them into the oven for about 15 minutes. I would like to add that I used a knife to cut out the unicorns, but using a cookie cutter is much easier and I wouldn’t recommend you to cut them out by hand because it was quite tedious. However, I couldn’t find the cutter I wanted online and decided to draw my own unicorn and use it as a pattern. Nevertheless, I do not recommend this technique unless you have ample spare time and being patient is your strong point!
It’s pretty easy to prepare some royal icing. Mix the ingredients together until the royal icing has the perfect consistency. Now just seperate the royal icing into portions, add some food coloring (a few drops are enough). Fill the mixture into some icing bags and start decorating your unicorns.
